ABOUT ‘AAHAAR BIHAR’-
A COFFEE TABLE BOOK ON BIHARI CUISINE

Bihari Cuisine is eaten mainly in the eastern Indian state of Bihar, as well as in the places where people originating from the state of Bihar have settled: Jharkhand, Eastern Uttar Pradesh, Bangladesh, Nepal, Mauritius, South Africa, Fiji, some cities of Pakistan, Guyana, Trinidad and Tobago, Suriname, Jamaica, and the Caribbean. Bihari cuisine includes Angika cuisine, Bhojpuri cuisine Maithil cuisine and Magahi cuisine.

While Bihari cuisine has many distinctive dishes, unfortunately, they are not widely known in the rest of the country. This is partly because Bihari cuisine is often subsumed in the larger North Indian culinary practices, disallowing specific study of the Bihari spread. Moreover, certain Bihari dishes like Litti Chokha have received exceptional focus, ultimately leading to the outshining of other equally unique recipes of the state. Equity Foundation thus prepared a Food Atlas to learn more about the State’s regional cuisines. The flavor of dishes in each region varies substantially. 

The Foundation has prepared a Photographic food atlas with a series of photographs showcasing different cuisines of Bihar. It has explored the Bihari dishes with awesome cuisine. Our repository of all Bihari dishes will surely last you a lifetime of delicacies which foodies can try, cook, and fall in love with. 

We have named it ‘AAHAAR BIHAR’ and it is being published by the Department of Tourism, GoB.
